Crunchy Taco Supreme

Chef’s tip: Forget the premade packets. Make your own all-purpose taco seasoning by stirring together 1 tsp dried oregano, ½ tsp chili powder, ½ tsp cumin powder, ½ tsp onion powder, ½ tsp garlic powder, ½ tsp paprika, ½ tsp salt, and ¼ tsp black pepper.

                                <li>1 tbsp  canola or grape-seed oil</li>
                                            <li>1 yellow onion, chopped</li>
                                            <li>½ tsp  salt </li>
                                            <li>2 tbsp  Cajun or creole seasoning mix </li>
                                            <li>¾ lb extra-lean ground beef </li>
                                            <li>1 cup fat-free refried beans </li>
                                            <li>1 cup  tomato sauce</li>
                                            <li>8 corn tortillas</li>
                                            <li>½ cup  reduced-fat sour cream </li>
                                            <li>2  plum tomatoes, seeded and chopped</li>
                                            <li>4 cups  chopped romaine lettuce </li>
                                            <li>1 cup  shredded aged cheddar cheese </li>
                                            <li> lime wedges </li>
                            </ul>

    <h2 class="block-title"><span>Directions</span></h2>

                            <li>Heat oil in a large skillet over medium heat. Add onion and salt and cook, stirring occasionally, until onion is softened and starting to brown, about 5 minutes. Add seasoning mix and heat 30 seconds. Stir in ground beef and heat until just slightly pink, about 4 minutes. Stir in refried beans and tomato sauce. Simmer for 3 minutes.</li>
                                    <li>Heat oven to 375°F. If needed, wrap tortillas in a damp cloth or paper towel and microwave on high until pliable, about 30 seconds. Lay tortillas on a work surface and coat both sides with cooking spray. Carefully drape each tortilla over individual bars of the oven rack. Bake until crispy and golden, 7 to 10 minutes.</li>
                                    <li>To assemble tacos, stuff beef mixture into tortillas and top with sour cream, tomatoes, lettuce, and cheese. Serve with lime wedges.</li>
